Celebrate New Year's Eve at The Carillon! Our adventurous and tantalizing 5-course New Year's Eve dinner and wine pairings will help you ring in the new year in style.

**MENU**
First Course
Roasted, pickled winter squash and beets, fontina and brie stuffed & fried Squash blossom, peanut, poblano ranch
Second Course
Sweet potato and young coconut soup, brioche crouton, pancetta, pickled shallots, and ricotta cheese
Third Course
Pan roasted bay scallops, cauliflower puree, pineapple chutney, winter radish, fava beans, cilantro
OR
Bucatini, black garlic, dungeness crab, maitake mushroom, shaved truffle, chili, brown butter
Entree
Coriander crusted elk rack, sautéed Wild West African salt prawns, creamed sunchokes, roasted asparagus, and harissa béarnaise
OR
Smoked Bison Ribeye, butter poached Maine lobster tail, Aleppo and manchego Yukon gold rosti, roasted trumpet mushrooms, sautéed kale, black eyed pea jus
Dessert
Chocolate grand Marnier ganache, white chocolate duo, smoked Sicilian pistachio curd, Pomegranate, champagne bubbles , citrus pistachio caramel crisp.
