Come learn from local entrepreneur, Eric Silverstein, owner of The Peached Tortilla. The Peached Tortilla began as a food truck in 2010, serving Asian and Southern-inspired tacos and sliders. Since then, the company has grown to include a boutique full-service catering company, two brick and mortar restaurants (Peached Tortilla and Bar Peached) and event space, Peached Social House. Most recently, Eric published his first book, "The Peached Tortilla: Modern Asian Comfort Food from Tokyo to Texas." Eric will discuss how he scaled his business over 9 years, providing some valuable lessons learned and tips on managing a brand and team across multiple operations.
