We teamed up with our buddies at Hop Capital Brewing in Yakima, WA, to bring you a special kind of IPA.
Event Details
See You Again Friend is a Tropical Thiolized IPA fermented with a unique yeast designed to increase tropical flavors (thiols) found in malt and hops. Brewed as a non-sour IPA, See You Again Friend is mash-hopped with Cascade and dry-hopped with HBC 630.
Cosmic Punch Yeast (https://omegayeast.com/news/cosmic-punch-new-thiol-boosting-strain) from Omega Yeast does the heavy lifting in this recipe. Precursor compounds found in malt and specific varieties of hops (like Cascade) go through "biotransformation" during fermentation to free more thiol compounds (grapefruit, black current, and passion fruit flavors). It's also been found that adding hops, non-traditionally, into the mash instead of the kettle, adds more of these precursors.
HBC 630 (https://yakimavalleyhops.com/products/hbc-630-hops) Hops is an experimental hop variety from the Hop Breeding Company, which is a joint venture between John I. Haas and Yakima Chief Ranches.
AROMA: HBC 630 is complex and fruity, with Sweet Fruits and Berries like Raspberry and Cherry, along with sweet candy-like esters and lactones giving creamy notes of peach and banana.
PEDIGREE: Resulted from a 2008 cross between HBC 364 and male parent 21-10-21.
We'll be brewing a small batch of this non-sour thiolized IPA, available in 16oz cans to go at our tasting room.
